INGREDIENTS 1 1/2 cups gluten-free flour 6 bananas 1 teaspoon Baking Soda 1 teaspoon Baking Powder 1 teaspoon Salt 1 teaspoon Cinnamon 1/2 teaspoon Nutmeg 1/2 teaspoon Cardamon 1/2 teaspoon Cloves 1/2 cup gluten-free Dark Chocolate, chopped 1 teaspoon Vanilla Extract 1/2 cup Sugar 5 1/2 tablespoons Melted Butter 2 Eggs, beaten Small piece of Butter (to coat the muffin tray) FOR TOPPINGS 1/2 cup Pecans, roughly ground 1 teaspoon Cinnamon 1 teaspoon Sugar DIRECTIONS PREPARING THE MUFFIN TRAY Coat the tray with a small piece of butter. Set aside. PREPARING THE BANANAS Lay the bananas on a baking tray Bake at 300f for 15 minutes, or until blackened. When done, set aside to cool. MIXING THE SOLIDS In a medium-sized bowl Add the flour Add the Baking Powder Add the Baking Soda Add the nutmeg Add the cloves Add the cardamon Add the salt Add the cinnamon Add the sugar Combine. Add the dark chocolate. Combine. Set aside. PREPARING THE BANANA BATTER In a medium sized-bowl Add the bananas Smash them, but not too much. Leave little chunks. Add the melted butter Add the vanilla extract Combine. Add the eggs Combine. Add the flour mixture Gently combine. Set aside. PREPARING THE GROUND PECANS Add the cinnamon Add the sugar Combine. Set aside. MAKING THE MUFFINS In the coated tray Add the banana batter Sprinkle the pecan/cinnamon/sugar mixture Mix.
