Cake: 2 cups flour 2 tsp baking soda 1/4 tsp baking powder 1/2 tsp salt 2 tsp cinnamon 1/2 tsp nutmeg 1/2 cup vegetable oil 3/4 cup butter (1 1/2 sticks) 1 cup sugar 3/4 cup brown sugar 4 eggs 2 tsp vanilla extract 1/4 cup raisins 1/4 cup walnuts (or whatever kind of nuts you like) 3 cups carrots (grated) Cream Cheese Frosting: 8 oz softened cream cheese 1/2 cup butter (softened) (1 stick) 1 tsp vanilla extract 1/4 tsp salt 4 cups powdered sugar Lightly grease a 9" x 13" pan. Bake in a preheated 350 degree oven for 25-30 minutes or until the top has lightly browned and a toothpick inserted in the center comes out clean.
