Rich, creamy, and full of flavor — this comforting mushroom chicken is the perfect one skillet dinner recipe! I make this mushroom chicken at least 2 times a week because it’s that easy, quick, and packed with flavor. This chicken recipe is my favorite take on the classic French comfort dish - Chicken Fricassée. Tender chicken thighs simmer in a creamy mushroom sauce with garlic, onions, and herbs — pure comfort food made simple. I cook it almost every weekend! My family loves this chicken dish. CRISPY CHICKEN: 2.5 lb (1.1 kg) chicken thighs, bone-in salt and black pepper, to taste 3 tbsp oil for frying MUSHROOM SAUCE: 12 oz (340 g) mushrooms 1 large onion 3 garlic cloves 2 cups (480 ml) water 1.5 cups (360 ml) heavy whipping cream ½ tsp dried thyme 2 bay leaves salt to taste parsley NSTRUCTIONS: 1. Heat oil in a large pan over medium-high heat. Season chicken thighs with salt and pepper, then sear for 8-10 min on both sides until golden brown. Remove from pan and set aside. 2. In the same pan, sauté the onion until soft and golden, add garlic and cook for about 30 seconds until fragrant. Add the sliced mushrooms and cook until they start to brown. 3. Pour in water, heavy whipping cream, add thyme, bay leaves and parsley. Return the chicken to the pan, cover, and simmer for 20-25 minutes until the chicken is tender. 4. Garnish & serve. Sprinkle with fresh parsley.
