Shakshuka | Easy Healthy Egg Breakfast | Arabic egg recipe

The word shakshouka (Arabic: شَكْشُوكَةٌ‎) is Maghrebi Arabic for "a mixture". Shakshouka (also spelled shakshuka or chakchouka) is a dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic. The dish has existed in Mediterranean cultures for centuries Ingredients: 4 large tomatoes diced 1 yellow onion diced 4 cloves garlic minced 1 cup green bell pepper diced 1 cup red bell pepper diced 2 tsp chili powder 1 tsp cumin powder Salt to taste 1 tsp black pepper 5 eggs 3 tbsp olive oil 1 tbsp cilantro chopped Feta cheese Directions: Heat 3 tbsp olive oil in a pan. Add the diced onions and garlic and saute for 3-4 minutes. Now add the green and red bell peppers. Cook stirring until the vegetables have softened. Add the chili powder, cumin powder, black pepper powder, and salt to taste. Add the tomatoes, and add half cup water. Cover and let simmer for about 15 minutes. Uncover and cook a bit longer to reduce and thicken the mixture. Using a spoon make wells in the tomato mixture and pour an egg into each indention. Reduce the heat, cover the pan, and cook on low flame until the egg whites are set. (about 3-4 minutes) Uncover and add chopped cilantro and feta cheese. Serve with your choice of bread.
