Full fat milk with cream 1 Cup. Fresh coconut 1 Cup. Thick Coconut milk 2 TBS. Ghee PROCEDURE: 1) Soak the Basmati rice in water for 20 mins . 2) Peel the coconut brown skin and grind in mixer to form snow.. do not add water at all. 3) Strain the soaked rice and in a pan add ghee and roast the rice till all the moisture is removed and rice become crisp and brittle. 4) Check inbetween if it is soft roast it more. 5)Cool the roasted rice and grind in the blender to form powder.(do not grind in hot state) 6)Add the rice powder in pan and roast little bit .. reduce the flame and add 1 Cup hot water slowly to cook the rice powder. 7) Add the coconut snow and a pinch of salt to enhance the taste. 8)Add 1/2 L of hot milk along with the cream and keep stirring to get rid of the lumps. 9) Let the phirni cook on high flame for some time. 10) Now add sugar and cook again. 11) It becomes thick and is cooked well now reduce the flame and add thick coconut milk, mix well slowly and switch off the gas. 12) Do not cook for long after you add coconut milk since it may curdle. 13) Phirni is ready fill in the kullad or any desired cups and set it in fridge for atleast 4 hrs or more. 14) Serve it cold.
