Asian Lettuce Wraps Ingredients: Ice Burg Lettuce / Romaine Lettuce 500 grams - Chicken Mince 2-3 Tbsps - Cooking Oil 1 Onion - Finely Chopped 1 Red (or green) Bell Pepper - Finely Chopped 1 Tsp - Crushed Garlic For the sauce: 3 Tbsps - Hoisin Sauce 2 Tbsps - Dark Soy Sauce 2 Tbsps - Peanut Butter 1 Tbsp - Sesame Oil 1 Tbsp - Honey 1.5 Tbsps - Sweet Chilli Sauce 1/2 Tsp - Ginger Powder 1/2 Cup - Water Garnish: Crushed Peanuts Sliced Spring Onions Fried Rice Noodles Method: Add oil to a pan, add the chicken mince & cook on high heat. Once its cooked through, add the onion & garlic. Let the onions soften & then add the bell pepper. Cook till everything combines well. Meanwhile in a bowl combine all the ingredients for the sauce & mix well. When the chicken mixture is fully cooked, add all the sauce and cook for 1-2 minutes till the sauce reduces. Cool the mixture down before serving. Prepare a bed of fried rice noodles on a platter, scoop on the chicken mix on the lettuce, top with the peanuts & spring onion greens & place on rice noodles to serve.
