This will definitely become your go-to breakfast recipe for any day of the week:) Like us on Facebook / allaboutflavorofficial Serves: 3-4 Ingredients: Olive Oil - 3 Tbsp Minced Garlic - 1 Tsp Roasted Cumin Seeds - 1 Tbsp Green chilies - 25 g (I used non-spicy to taste) Onions (diced) - 100 g (approx. 3/4 cup) Bell Peppers (julienne) - 100 g (approx. 1 cup) Tomatoes (diced) - 350 g (Approx. 2 cups or 4 large) Paprika Powder - 1 Tsp Black Pepper - 1/2 Tsp Salt - To taste Ketchup - 2 Tbsp Eggs - 3-5 (depending on the number of servings) Coriander (chopped) - 4-5 Tbsp Heat the olive oil in a non-stick pan. Add the garlic and fry it for 30 seconds. Crush the cumin seeds between the palms of your hands, to break them up slightly and add it to the hot garlic oil. Add the chilies and fry until fragrant (about 30 seconds) Now add the onions and bell peppers and fry until soft (approx. 5 minutes) Add the tomatoes, paprika, salt and black pepper and mix well. Cover and let it cook for 5 minutes, until it forms a thick sauce. At this moment add the tomato ketchup and stir to combine. Using a spatula, make wells in the spicy sauce and crack in the eggs. Cover and let it cook on low heat for 4-5 minutes until the whites set but the yolks are still runny. Garnish with fresh coriander and enjoy while still hot!
