Guthi vankaya Curry - South Indian special dish

This recipe is very famous south Indian vegetarian dish. This is very popular in Telugu speaking people of Andhra and Telangana states. This dish is called, "Guthi Vankaya Curry" or "Masala Vankaya Gravy". It is very delicious and liked by most. Ingredients: Brinjals/vankayalu Turmeric Red chilli powder Salt Coriander powder Ginger garlic paste Onions Green chilies Mint Coriander leaves Bay leaves Cloves Cardamoms Peanuts roasted and powdered Sesame seeds roasted and powdered Dry coconut powder Yogurt Preparation: 1) Fry the Brinjals in oil in a shallow pan and keep it aside. 2) Fry the Onions in oil in same pan. Once thoroughly fried, turn off the stove and let onions cool it down. 3) Now in Mixy bowl add fried onions, add Peanut powder, Sesame powder, Coconut powder, Red chilly powder, Salt, Coriander powder and add Yogurt and make thick paste but not to make fine paste, a bit coarse and keep aside. 4) In a Deep frying bowl, add some oil and tamper cumin and mustard seeds, cardamom, cloves, bay leaves and fry little bit and then just add Mint leaves and Green Chillies and fry little bit and add the gravy from the Mixy jar and fry little bit. You can also add water after frying for 5 mins.. wait for 15 mins to get the gravy thick consistency and add Brinjals. 5) Cook it for 3 to 4 mins and make sure the oil comes out from gravy and turn off the stove. Finally transfer this to a serving and garnish with coriander leaves. 6) The dish is ready to be served.
