Ingredients 1 lb beets 1/3 cup walnuts 1/3 cup feta 1/4 cup sliced onions 2 cloves of garlic 2 tbs olive oil Salt, pepper Fresh dill Instructions Peel the raw beets, wash them and cut them into small cubes. Add to a baking dish and mix with olive oil, salt and pepper. Cover with foil and bake at 425 F for 30-45 minutes until fork tender. Remove the foil, add minced garlic and mix well. Add the beets to a plate and layer up with sliced onions, chopped walnuts, crumbled feta cheese and fresh dill.
