If you are a vegan and missing gelatin desserts, then you came to the right place. This recipe is great for vegans. Mango Coconut jelly is made with agar agar powder. It is a vegan gelatin. You can find this in any of the Asian grocery stores. In this recipe we have substituted white sugar with palm sugar(see below for more info). Give this delicious and guilt-free dessert recipe a shot next time your sweet tooth calls out to you. Ingredients Small glass moulds or one square glass bowl MANGO LAYER Mango puree from- 2 1/2 cups( from 2 mangoes) Orange juice - 1/2 cup water - 1 1/4 cup Agar agar powder - 3 tsp sugar - 2 tbsp or as needed COCONUT LAYER Water - 2/3 cup Agar agar powder - 2 tsp Sugar - 3 tbsp Salt - a pinch Coconut milk - ⅔ cup Instructions for Mango Layer 1. Blend the mango cubes into smooth puree in a blender and keep aside. 2. In a small pan , add water and agar agar powder . 3. Stir continuously for about 2 mins to dissolve the powder in the water. 4. Now, turn on the heat to medium flame and boil the water( stir frequently) for about 5 mins. 5. One by one add mango puree, orange juice and sugar and mix it well. 6. Remove from the heat and taste the mixture and add the sugar according to your taste buds. 7. Pour 2 tbsp of mango mixture in the individual cups. 8. Rest it in the refrigerator or in the room temperature until it forms into jelly. 9. Jelly forms in about an hour depending on the temperature. 10. After an hour poke a toothpick in the center to check whether the jelly is formed or not. 11. If not refrigerate for some more time. Instructions for coconut Layer 1. In a pan , add water and agar agar powder . 2. Stir continuously for about 2 mins to dissolve the powder in the water. 3. Now, turn on the heat to medium flame and boil the water( stir frequently) for about 5mins. 4. One by one add coconut milk, salt and sugar and mix it well. 5. Remove from the heat and taste the puree and add the sugar according to your taste buds. 6. If the mango layer has set , gently pour the coconut layer on the mango base. 7. If the mango layer has not set keep the coconut mixture on low flame and covered otherwise if forms into jelly. The coconut mixture should be hot. 8. Rest it in the refrigerator or in the room temperature until it forms into jelly. 9. Jelly forms in about an hour depending on the temperature. 10. After an hour poke a toothpick in the center to check whether the jelly is formed or not. 11. If not refrigerate for some more time. 12. Enjoy the Mango Coconut jelly when its cold.
