Mango Kulfi I मैंगो क़ुल्फ़ी I Pankaj Bhadouria Here is a recipe of Mango Kulfi without using Khoya or Corn flour. A good Mango Kulfi is made using full fat milk. This recipe is made in the traditional way to make a good Malaidaar Kulfi. Saffron is added to the kulfi mixture to add on to the flavor and color. If fresh Mango is not available, you can also use tinned Mango Puree for making the Kulfi. Thank you for watching! 💫 And don’t forget to subscribe here: https://goo.gl/mQwVjN ***************************************************************************** Recipe : Mango Kulfi Preparation time: 10 minutes Cooking Time: 20 minutes Makes: 7-8 Ingredients: 1 liter Full Cream Milk ¼ cup Milk Powder ½ cup Sugar 1 pinch Saffron 2 tbsp chopped Pistachios 1 cup fresh Mango Puree Method: Boil the milk in a pan. Once it comes to a boil, add in the milk powder. Mix well and simmer for 2-3 minutes. Add in the sugar. Mix in well. Reduce the heat and allow to simmer for 2-3 minutes. As the milk simmers, a layer of malai will start accumulating on the surface, with the help of a skewer, push it aside. Allow another layer to accumulate and push that aside too. Repeat the process after every 1 minute till you have a malai rich mixture ready with you. Add in the Saffron and allow to simmer till the mixture is reduced to half. Add in the chopped Pistachios. Cool the mixture and mix in the Mango Puree. Pour the mixture into the kulfi molds and freeze for 7-8 hours. Once set, demold and serve Fresh Mango Kulfi.
