This is one of the famous Nyonya dishes that my mum will prepare whenever I am back home or during Chinese New Year. It is super simple to prepare and does not require a lot of time. if you follow my recipes, you will have a plate of Sweet Sour coated with caramel toasty Asam Prawns (Asam Heh/tamarind prawns), full of wok hei. There are no complicated ingredients needed besides the following list: Recipes: 1 pack of fresh juicy Prawns 1 - 2 tbspn of Tamarind paste (dissolve in water) 1 - 2 tbspn of sugar (the more Tamarind you use, the more sugar is needed to balance the acidity of Tamarind juice) 1 - 2 tbspn of mice garlic 1 - 2 tbspn of dark soya sauce for coloring 1 tbspn white pepper (is optional) The only key "Notes" of all time is: pan fry these marinated prawns on medium-high heat till all Prawns are well down and the sugar is fully caramelized DO NOT pour the marinating juice into the pan during the first 6 mins of stir fry. We need the prawns to taste toasty, coated with caramelized sugar and Tamarind juice. Only add a tablespoon of Tamarind juice and a pinch of salt to elevate the taste before turning off the heat.
