This brewer has earned the blessing of several major specialty coffee associations including the SCAA, SCAE, and ECBC because of its steady temperature and ability to saturate coffee grounds evenly to produce stellar coffee. The Classic From Moccamaster features a heavy duty copper boiler that maintains a constant 90 – 95 degrees Celsius. This temperature range is one of the keys to balanced coffee brewing. There are also two temperature settings for the post-brew warming plate that will keep your coffee hot for up to 40 minutes. The Moccamaster Classic also features a 9 hole spray head that can saturate all the coffee grounds evenly. Programmed into the brewing cycle is a bloom phase, where the coffee grounds are lightly sprayed. The Moccamaster Classic is one of the most popular models with a 1.25L capacity - which translates to around 10 cups of brewed coffee -and it will make this in 6 minutes. At its core the Moccamaster uses a Copper Heating Element to achieve a very stable range of water temperature ideal for brewing coffee, between 92º - 96ºc. So let’s get brewing using the Moccamaster Classic. This method I’ll be using coffee brewing is used has been adopted to the Moccamster From many other styles of brewing to achieve the tastiest coffee. I’ll be brewing the full capacity of the Moccamaster today but the same rules apply if you’re only brewing half batch or less. Stick to a brew ratio of 1:16.5 , so for 1.25L of water , I’ll be using 75g of beans and grinding them to a medium to coarse grind.. In using the Baratza Encore Grinder I’ve got it set at 25. It’s important to get the grind setting just right as this dictates the speed at which the water will percolate through the ground coffee - too fine and your filter basket may clog and over fill with water - too coarse and the water will run too fast and with a decreased contact time of water to coffee, you’re likely to have a weak brew. Once you’ve ground the coffee Insert the size 4 paper filter in to the brew basket by folding the two perforated sides in and it’ll fit perfectly into the brew basket.. Open the baskets flow rate and sit it over the glass vessel - by pouring around 250mls of pre-prepared hot water you rinse the filter and heat up up The brewing components. Once that’s done - remove the rinse water.. And fill up the back water tank to just below the 10 cup mark. Which is 1.25L. Place the grounds in the basket and shut off the flow control of the basket. This will prepare our pre-infusion stage. Turn on the Moccamaster and wait for the water to just cover the grinds before turning the moccamaster back off and waiting 30 seconds. During this time, just use the back of your spoon to ensure all the grinds are submerged and there’s no coffee climbing the sides of the basket then turn the Moccamaster back on and when the water begins running again - open the baskets flow control to half open. If you have the grind setting correct, confidently you’re now able to let it automatically brew away. If it looks to be overflowing at any stage - just open up the brew basket to increase the flow out, and this is something I’ll usually do closer to the end of the brew anyway so there’s not too long a drawdown waiting for the last drips. Once it’s complete and stopped dripping the Moccamaster will turn off automatically and the heating plate will stay on for 40mins. You can control the heat of the plate to either HI or Lo but my preference is to drink the coffee as it cools So I don’t use the heating plate at all. And the mixing lid to the decanter makes sure the whole brew is ready to drink. In cleaning the Moccamaster, make sure you rinse out the brew basket and clean the decanter after use and drying it before placing it all back together… after 100 brews, or a complete box of filters - you’ll want to descale the unit to ensure you get the best performance and quality brews for years to come. #alternativebrewing #moccamaster #batchbrew
