Ingredients: For Crushing Mix: Dry red chilies- 2 Green chilli - 1 Shallot (small onion ) - 2 whole Ginger - 5 small pieces Pepper balls - 1 tbsp Fenugreek seeds (Uluva) - 1 tsp Cumin seeds ( Jeera) - 1 tsp Curry leaves- a few For Tamarind water: Tamarind- 50g Water - 2 cups For Curry: Oil - 3 tbsp Mustard seeds - 1 tsp Dry red Chilli - 1 Curry leaves - a few Shallots (small onions) - 7 nos. chopped finely Coriander powder - 3/4 tbsp Asafoetida powder ( Kayam) - 2 tsp -Turmeric powder - 1/2 tsp Water - 1 litre Pepper powder - 1 tsp Salt as required Coriander leaves - a few Method: -Crush dry red chillies, green chilli, small onions, ginger pieces, pepper balls, fenugreek seeds and cumin seeds for a minute. Then add few curry leaves and crush the mix again until it becomes a coarse paste form. -In a hot pan, pour water and tamarind. Once it boils, keep it aside. -In another hot vessel, add oil. Once hot, add mustard seeds. When it stops crackling, add dry red chilli, curry leaves and finely chopped small onions and sauté for a minute. Then add the crushed mix and sauté till the mix becomes golden brown. Next, add coriander powder, fenugreek powder, turmeric powder, tamarind water (remove the tamarind and add the water only). Pour water and add pepper powder & salt. -Once the water starts boiling, add coriander leaves and boil again for a minute. Ready to serve. Add few more coriander leaves for garnishing.
