Qeema Bhare Karele - Stuffed Bitter Gourds with Spiced Mutton Mince. A classic homestyle recipe that turns the humble karela into a gourmet delight. Don't forget to *SUBSCRIBE!* / @indianchefinamerica INGREDIENTS: For the Karela (Bitter Gourd): 8-10 medium-sized Karela (Bitter Gourds) 500 gm 1 tsp Salt 1 tsp Turmeric powder For the Qeema (Mince Mutton) Stuffing: 500g Ground Mutton (Keema) 2 large Onions, finely chopped or sliced 1 tbsp Ginger paste & 2 tsp Garlic paste Whole spices: Black cardamom 3, Cloves 5, Black Pepper 1 tsp, Cumin Seeds 1 tsp, Bay Leaves 3-4. Whole red chilies 5-6. Powdered Spices: Red Chili powder 1 tsp, Coriander powder 2 tsp, Turmeric powder ½ tsp. Make a paste of all these powders with some water. Salt 1 tsp, adjust as per taste Black pepper powder ¼ tsp, Garam Masala Powder ½ tsp 100 ml Oil for cooking For Garnishing: Chopped Cilantro, ginger julienne, split green chilies, Lemon slices *METHOD:* 1. Peel and slit the karelas, scoop out the seeds. Rub with salt and turmeric, set aside for 20-30 mins. Rinse and pat dry. 2. In a pressure cooker, heat 50 ml oil, add whole spices (Black cardamom 3, Cloves 5, Black Pepper 1 tsp, Cumin Seeds 1 tsp, Bay Leaves 3-4.), fry for 5 secs. Now add chopped onion (50 Gm) and sauté onions until golden. Add ginger-garlic paste and fry for a minute. 3. Add ground mutton and roast for 3-4 minutes. Add 5-6 whole red chilies. Add 250 ml water and pressure cook for 20 minutes. 4. After 20 minutes, remove all whole spices and whole red chilies and discard. Dry up any extra water. 5. Stuff this keema mixture after cooling into the prepared karelas. Apply a thread all around the karela so it doesn’t open up as shown in video. 6. Take a deep frying pan, add a little oil and place the stuffed karelas in it. Shallow fry the karelas on low-medium heat turning occasionally, until the karelas are tender & light brown. 7. Remove the karelas from Pan and keep aside. 8. In the same pan, add 50 ml cooking oil, add 1 tsp of Cumin, roast for 5 secs. Add 50 gm of sliced/chopped onions. Roast till onion is light brown. 9. Add powdered masala paste and roast for 2-3 minutes. Now add Minced meat and roast for 3 minutes. 10. Now add ¼ tsp black pepper powder & ½ tsp of garam masala powder. Mix it. 11. Add 50 ml water to adjust the gravy thickness. Mix it. 12. Place all karelas in it and cover with keema gravy. Cover the pan and simmer for 10 minutes. 13. After 10 minutes garnish with chopped cilantro, ginger julienne and split green chilies. 14. Serve hot with roti or steamed rice. *SERVE WITH:* Phulka, Paratha, or Steamed Basmati Rice.
