So I watch and subscribe to masterclass classes, and one of my favorite channels is Aaron franklins classes. So I essentially took his brisket recipe and applied it to a Tri tip just to see how it turns out. Well it turns out its amazing! So I start with a perfect cut of meat. And I really prefer wagyu cause the fat is so buttery and delicious. So what you have to do is use a mustard as your base, so rub mustard all over your steak, this will allow your seasoning to stick really well to the Tri tip. Then season using only salt and pepper. At that point its ready to go on the smoker. I personally prefer Kamado Joe. I love the flavor of a charcoal grill! We want it cooking at about 250 degrees and cook to an internal temp to 110. This is where I sort of went a little wild . I have and LOVE my evo skillet top at home. So I decided that I would reverse sear this bad boy in a stick of butter! So I turn my skillet on, then I wait…. Once the steak is at 110 degrees. Its time to melt the butter and sear the steak over butter. I mean what can go wrong! Once you have an internal temp of 130 degrees. Pull the meat and wrap in butcher paper. Then let rest. This should give you a nice medium rare. Then slice and enjoy!
