A taste of Italy that's simply irresistible! 🇮🇹🍝 👇RECIPE👇 @khalidelmahi INGREDIENTS: • For the gnocchi: 150g eggplant puree 1 egg yolk 150g blended bread crumbs 20g Parmesan cheese 20g flour Salt, pepper • For the sauce: 1 tablespoon extra virgin olive oil ½ teaspoon chili flakes 1 clove of garlic 10 cherry tomatoes Salt, pepper Chopped parsley as needed Extra virgin olive oil 1 mozzarella fior di latte INSTRUCTIONS: Peel and dice the eggplants. Place them in a vacuum cooking bag with various aromatics and cook in boiling water. Drain the eggplants to remove excess water. Blend until you get a creamy result without lumps. Create a gnocchi dough using eggplant puree, 1 egg yolk, blended bread crumbs, Parmesan cheese, and flour. Mix everything and shape the gnocchi. Cook them until they float. Sauté chili flakes and garlic in olive oil. Then add quartered cherry tomatoes, adjust with salt and pepper. Toss the gnocchi in the sauce, add parsley, mix everything, and toss with extra virgin olive oil. Plate and finally, add the mozzarella.
