Goes best with hot chapatis and dal-rice. #lunch and #dinner #Homemade #Food #Recipes ******************************************************************************************** SERVING : 4 PREPARATION TIME : 10 minutes COOKING TIME : 10 minutes INGREDIENTS : Potatoes - 2 medium cubed Brinjal - 4-5 cubed Tomatoes - 2 cubed Coriander - 1 cup chopped Garlic -1 tablespoon chopped Green chilies - 2 tablespoons chopped Salt as per taste Turmeric powder - 1 tablespoon Salt as per taste Garam masala powder - 1 tablespoon Mustard oil - 1 tablespoon PROCEDURE : 0:00 - Introduction 1:17 - Heat mustard oil in pan on medium flame. 1:31 - Add garlic and green chillies and fry a little. 1:43 - Add potatoes, brinjal and tomatoes and fry for 30 seconds. 2:03 - Add all spices and salt and mix well. 2:23 - Cover and cook for 2 minutes or till potatoes cooked. 3:08 - Add chopped coriander and mix well. 3:24 - Aloo Baigan Lehsuni is ready to serve. TIPS : Cover and cook for faster cooking. After adding salt vegetables release water.
