Hello Friends, Our dinner tonight was a quick soup, which we called “Butternut, Apple, Sweet Potato Soup”. The soup was made with veggies and fruit that needed to be used up. This recipe was off the top of our heads and came out so good! We served our soup with “go to” salads, it was very satisfying and fulfilling, we felt like we were eating comfort food because the soup was so rich and creamy. Please join us on Facebook @ "Terry Angel Grier", twitter @ “Plant Based Love – Terry and Angel”, or Instagram @ angelgrier22. “Butternut, Apple, Sweet Potato Soup” 4 1/2 cup or 1 whole butternut squash 1 1/2 cup or 1 large apple 2 1/2 cups sweet potatoes or 1 large sweet potato 1 large onion 5 to 6 cloves of garlic 1/2 cup chickpeas Juice of 1 lemon 1/4 cup maple syrup 2 Tbs low sodium vegetable Better than Bullion 2 1/2 Tsp cinnamon 3/4 Tsp all spice Fresh cracked pepper to taste 6 cups water Chop all fruits and veggies into large chunks. Place all ingredients into Instant Pot. Cook on high pressure for 40 minutes. Either slow release for 20 + minutes or quick release immediately. Blend with immersion blender until smooth and creamy.
