A quick and easy lunch or dinner 🐼 for 1 person Ingredients: 2 tomatoes 2 eggs 1 spring onion Salt Sugar Corn starch Cooking oil Some water Instructions: 1. Roughly whisk the eggs with some salt 2. Roughly cut the tomatoes. They will shrink in the pan so keep that in mind. 3. Cut the white part of the spring onion in parts of 2 cm. 4. Thinly cut the green part of the spring onion. This will be used as garnish. 5. Mix equal parts water and cornstarch and set aside. 6. Heat some oil and scramble the eggs on high heat. I would recommend undercooking it a little since it will be added later on again. 7. Set the eggs aside and add some more oil to the pan. 8. Stir-fry the white parts of the green onion until fragrant. 9. Add the tomatoes and cook until softened. 10. Add 200 ml of water and let it boil. 11. Add a teaspoon of sugar and salt and mix. 12. Add the egg back and mix until well combined. 13. Cook it for a minute and add some of the cornstarch slurry. This will help create a sauce by thickening up the liquid. Add more until you get the consistency you like. 14. Serve it up and enjoy with some rice. #egg #cooking #chinese
