Masala Kitchen | Poonam Devnani Recipe INGREDIENTS: For Dal: Water - As Required Chickpea Lentil/Chana Dal - 1 Bowl Moong Dal - 1/4 Bowl Black Cardamom - 1 Clove - 4 Asafoetida/Hing Powder - 1/4 tsp Salt - 1-2 Pinch Turmeric Powder - 1/4 Tsp For 1st Tadka: Oil - 1-2 Tbsp Cumin Seeds -1/2 Tsp Onion - 1 Ginger & Garlic - Grated Tomato - 1-2 Crushed Red Chilli Chilli) – 1/2 Tsp Turmeric Powder - 1/4 Tsp Salt - 1/2 Tsp Kashmiri Red Chili Powder - 1/2 Tsp For 2nd Tadka: Ghee - 1 Tbsp Cumin Seeds(Cumin) -1/4 Tsp Asafoetida/Hing Powder - 1/4 tsp Curry Leaves - Some Green Chili - 3-4 Long Chopped Dry Red Chilli (dry whole red chilli) – 1-2 Garlic - 1/2 Tsp Fried Masala - 1-2 Spoon Salt - Some Kashmiri Red Chili Powder - 1/2 Tsp , Coriander Leaves(dhaniya patti) - For Garnishing Lemon Juice(nimbu ka juice) - Some For Naan: Hot Milk(hot milk) - 1/2 Cup Curd() - 1/4 Cup Sugar Powder(chini ) - 1 Tsp Salt(namak) - 1/2 Tsp Baking Powder(baking powder) - 1/2 Tsp Baking Soda(baking soda) - 1/4 Tsp Oil(oil) - 2 Tbsp White Flour/Maida(maida) - 1+1/4 Cup For Masala: Coriander Seeds(dry whole coriander) - 1 Tbsp Cumin Seeds(jeera) -1/2 Tsp Fennel Seeds(saunf) - 1 Tbsp Crushed Red Chilli(crushed red chilli) - 1 Tbsp For Filling: Potato - 4 Boiled & Grated Green Chili - 3-4 Salt - As Per Taste Crushed Red Chilli - 1/2 Tsp Dried Mango Powder(Amchur Powder) - 1 Tsp Roasted Cumin Powder(Bhuna Jeera Powder) - 1 Tsp Coriander Leaves - Some RECIPE: Wash some Chana Dal & Moong Dal & soak them separately for 1-2 hours. Then keep the cooker on the flame, put Water & soaked Chana & Moong Dal, Black Cardamom, Clove, Asafoetida/Hing Powder, Salt & Turmeric Powder in it. Cover with lid & give it 2 whistles. Release the whistle & take out the Dry Spices from it. For 1st Tadka, keep the pan on the flame, put Oil, Cumin Seeds, finely chopped Onion, grated Ginger & Garlic & saute them well. Then put finely chopped Tomato, Crushed Red Chilli, Turmeric Powder, Salt to taste & Kashmiri Red Chilli Powder. Cook till Tomato & Onion releases the oil. When the Tadka cooked well, remove the two spoon Tadka from it & keep it aside. At last, transfer the cooked Dal to it & cook well. For 2nd Tadka, keep the tadka pan for heating, put some Ghee, Cumin Seeds, Asafoetida/Hing Powder, Curry Leaves, long chopped Green Chilli, Dry Red Chilli, grated Garlic, Fried Masala, Salt to taste, Kashmiri Red Chilli Powder & cook well. Put the tadka on dal, squeeze some Lemon Juice & garnish with Coriander Leaves. Now Dhaba Style Dal is ready to serve, cover & keep aside. For Naan Dough, take a big steel parat, and put Hot Milk, Curd, Sugar, Salt, Baking Powder, Baking Soda, Oil & White Flour/Maida in it. Mix well & bind the soft dough. Cover with a wet cloth & keep the dough aside for half an hour. For Masala, take a mortar pestle & put some Dry Coriander Seeds, Fennel Seeds & Cumin Seeds & then coarsely crush them. take them out on a plate & mix some crushed Red Chilli. For Filling, take a bowl, put boiled & grated Potato, finely chopped Green Chilli, Salt to taste, Crushed Red Chilli, Dried Mango Powder, Roasted Cumin Powder & Coriander Leaves in it. Mix them all & make the balls. For Naan, dust some All Purpose Flour on the Kitchen Platform and Roll it. Then put the filling on it & fold it. Then fold it again in a round shape. Spread it & roll with the rolling pin. In the same way, make all the Naans. Put some salted water on naan tawa to set it. At last, apply Water to the backside of the Naan & cook the Naan. Then cook it on the direct flame as shown in the video. Apply some Ghee to it and serve the Crispy Tandoori Layered Naan with Tasty Tadka Dal with Green Salad.
