Editing and camera:   / felix.parker     / felix_parker_      / @felixparker   Fried Rice Ingredients for 1 to 2 servings, depending on your appetite 1 small onion 2 garlic cloves 1 red chili pepper 1 handful of brown mushrooms ½ carrot 1 spring onion 2 eggs 4 tablespoons neutral vegetable oil 2 handfuls of cooked rice 2 tablespoons fish sauce 2 tablespoons soy sauce 1 teaspoon brown sugar Salt Freshly ground black pepper 1/2 lime 1 teaspoon sesame oil 1. First, you need to prepare all the vegetables so that the frying can go quickly. Peel and finely dice the onions, slice the garlic, and deseed the chili pepper and finely slice it. Quarter the mushrooms, dice the carrot into small cubes. Slice the spring onion into rings. Whisk the eggs. 2. Heat two tablespoons of oil in a wok or large nonstick frying pan until very hot and spread evenly. Add the garlic and fry briefly. Then remove it from the pan. Add a little more oil to the pan and fry the mushrooms until browned. Then add the onions and carrots and fry until crispy. Push the vegetables aside and add the beaten eggs to the empty space. Stir-fry until very crumbly. Then add the rice, mix everything, and continue frying. 4. Now it's important not to turn the rice too often, otherwise it won't crisp up. Only stir the rice again after about two minutes. Then let it sit for another two minutes. Season everything with fish sauce, soy sauce, sugar, salt, pepper, and a little lime juice. 5. Transfer the rice to a plate, scatter the spring onions, remaining chilies, and garlic over the rice. If desired, drizzle with a squeeze of lime juice. Tip: Fried rice tastes best when prepared in small batches. So, it's best to serve it one at a time.
