Redbud Flower Tacos - 2 Ways: Bean Taco and Fish Taco - with white wine Redbud flower sauce

Spring is the season for enjoying fresh flowers from the Redbud Tree. I show how I used Redbud flowers to make two kinds of tacos. One is a bean taco and the other is a fish taco with a white wine sauce. That white wine sauce is great served over plain fish, too. I also make a dandelion greens salad from some monster dandelion leaves.I hope this video gives you ideas for using flowers from the Redbud trees that are growing near you. For the Bean-Redbud Taco, I use Kenearly Yellow Eye Beans. They are a great little dry bean that I grew here at Haphazard Homestead. They cook up like a Pinto Bean, but Redbud flowers go well with any beans! I pressure cooked my dry beans, then added them to onions sauteeing in a cast iron skillet. I added salt, cumin, and water as needed, until the beans were like Refried beans. Then I added a lot of Redbud flowers. To make the taco, I added shredded cheddar cheese. The sauce for the Fish Taco is completely different. I started by sauteing the stalks of Elephant Garlic, that I harvest in the spring and treat like Spring Leeks. I added flour and browned it. Then I added white wine and let it reduce. I turned the heat off and added Half and Half, salt, and pepper. Then I folded in a lot of Redbud flowers. To make the Fish Taco, I put grilled fish in a soft corn tortilla and top it with this filling. The dandelion salad is made from some giant, monster dandelions growing here at Haphazard Homestead. I do the little trick of stripping out their center stem to remove the bitter part of the leaves. Then I just top it with chopped tangerine slices and more Redbud flowers. It's a pretty salad! The sauce for the Fish Taco is great on fish, too -- no taco necessary. These flowers are from two different Eastern Redbud trees, used as landscaping plants in my own yard and in my neighbor's yard. Flowers from any Redbud tree in the Cercis genus are good!
