Get it here: http://amzn.to/2oFAMIf Mini Taco Cups Recipe 1 cup brown rice ½ cup black beans 2 ¼ cups broth ½ red onion diced 1 red bell pepper diced 1 Tbsp minced garlic 1 ½ Tbsp taco seasoning 1 package wonton wrappers Salsa (I prefer pico de gallo but any favorite of yours will also work) Avocado diced Preheat oven to 350 degrees Place onion and garlic in the Instant Pot and saute with water until translucent. Add broth and taco seasoning to the pot. Set Instant Pot to manual high pressure for 25 minutes and make sure the valve is set to sealing. While the beans and rice are cooking put 1 wonton wrapper in each cup of a mini muffin tin forming a cup. You can also use a regular size muffin tin if you prefer. Place muffin tin into the oven and cook for 10 minutes or until golden brown. When the rice and beans are done cooking let the pressure release naturally for 10 minutes then you can open the valve to release the rest of the pressure. Add the bell pepper to the rice and beans and give it all a good stir. Fill the wonton cups with lettuce or cabbage, the rice and beans, and salsa then top with a piece or two of avocado. Use your imagination and add any other toppings you wish. Sour cream, tapatio, guacamole, and corn would all make delicious additions.
