The term "Do Pyaaza" refers to the use of onions in two different stages and forms during cooking, enhancing the sweetness and texture of the dish. #onion #fenugreek #aloo #potato #methi #chefharpalsingh #namakshamak #recipe #cooking #food #indianfood Ingredients Quantity Oil 2 tbsp Cumin seeds 1 tsp Ginger chopped 1 tbsp Onion chopped 1 no Potato peeled 4-5 no Ginger garlic paste 1 tbsp Salt to taste Turmeric powder ½ tsp Tomato chopped 1 no Fenugreek leaves chopped 1 bunch Coriander powder 1 ½ tsp Red chilli powder ½ tsp Cumin powder ½ tsp Chaat masala ½ tsp Garam masala 1 tsp Green chilli chopped 2 no Curd ½ cup Onion diced 1 no Capsicum diced ¼ no Tomato diced 1 no Fresh coriander sprig 5-6 no Fresh coriander sprig for garnish Method:- 1. Heat oil in a kadai and add cumin seeds. Let them splutter. 2. Add chopped ginger and chopped onions sauté until they turn golden brown. 3. Take peeled potato and cut it into cubed and add the cubed potatoes to the kadai and mix well. Cook for about 4-5 minutes on medium heat. 4. Now, add ginger-garlic paste and salt sauté for a minute until the raw smell disappears. 5. Add turmeric powder and mix well. Sauté for a minute. 6. Add chopped tomato and sauté for 2 minutes and mix well. 7. Add chopped fenugreek leaves (methi) and cook for another 10 minutes, stirring occasionally. 8. Now add coriander powder, red chilli powder, cumin powder, chaat masala, garam masala and chopped green chilli. Mix the spices well with the potatoes. 9. Add curd and mix well. Add diced onion, diced capsicum and diced tomato mix well. Cook for 5 minutes until the onion & capsicum are tender. 10. Take coriander sprig and chopped fine well. Add in a kadai and mix well. 11. Let it cook on low heat for about 10-15 minutes, or until the potatoes are tender. 12. Now side out in serving bowl and garnish with coriander leaves. 13.
