Village Style Mangalorean Surmai Curry and Surmai Fry Recipe | King Fish
The secret of cooking the best surmai fish curry lies in its homemade masala. In this recipe video, you will see how traditional complete village style king fish curry also known as Anjal in Mangalore is made from scratch. Surmai fish or seer fish is a mild flavoured fish, the taste of which is enhanced by this traditional home made fish curry masala. Also, we will use the same masala for our surmai fry recipe as well. I have used village style earthen pot to cook my fish curry. The benefit of cooking in earthen cookware is that it absorbs moisture due to their porous nature, letting heat circulate slowly through the food being cooked, making it aromatic and retaining the nutrition, providing required minerals that include calcium, magnesium, iron and phosphorus.
