A luscious non-veg broth with an Oriental touch that has seared, succulent chicken and egg foam. LUNG FUNG SOUP Ingredients 150 grams chicken mince (keema) 2 eggs 2 tbsps oil 1 tbsp ginger 1½ tbsps garlic 2 green chillies 1 tsp vinegar 1 tsp dark soy sauce 1 green capsicum ¼ cup cabbage Salt to taste Crushed black peppercorns to taste 4 cups chicken stock 2 tbsps corn flour slurry 2 tbsps spring onion greens Method 1. Separate the egg whites from the egg yolks. (Reserve the yolks for another recipe.) 2. Take the egg whites in a large bowl, beat the mixture with the helps of whisk till it forms soft peaks. 3. Heat oil in a wok. Add ginger, garlic, green chillies and sauté for 1-2 minutes. Add chicken mince and sauté on high heat for 2-3 minutes. Add vinegar, mix and cook for 1-2 minutes. Add dark soy sauce, green capsicum, cabbage and sauté for 1-2 minutes. 4. Add salt, crushed black peppercorns, and sauté for 2-3 minutes. Add 4 cups chicken stock, mix and boil. Add corn flour slurry, mix and cook for 2-3 minutes. 5. Bring it to a boil. Add corn flour slurry, mix and cook for 2-3 minutes. Add spring onion greens and mix. 6. Transfer into individual serving bowls and serve hot.
