With nuts: about 195 kcal per slice! 🥕 Light Carrot Cake with Oat Flour (No Sugar, No Butter, Guilt-free) Ingredients (for a 20 cm / 8-inch pan): Eggs — 2 Ripe banana — 1 large (or 2 small, about 120–150 g mashed) Thick natural yogurt (or kefir) — 150 ml Oat flour — 160 g Baking powder — 1½ tsp Cinnamon — 1 tsp Carrot — 200 g (grated finely) Nuts or raisins — optional, 40–50 g A pinch of salt Light Cream: Thick Greek yogurt — 200 g A little honey — to taste Instructions: 1) Mash the banana with a fork, then add the eggs and yogurt. Whisk lightly. 2) Add the grated carrot and mix. 3) In a separate bowl, combine the oat flour, baking powder, cinnamon, and salt. 4) Gradually add the dry mixture to the carrot-banana mixture and mix until smooth. 5) Add nuts or raisins if desired. 6) Pour the batter into a baking pan and bake at 180°C (350°F) for about 37 minutes. 7) Let it cool completely. 8) For the cream, simply mix Greek yogurt with honey. 9) Spread the cream and decorate as you want. 10) Let it cool in the fridge for half an hour or longer.
