Here’s a simple recipe for making Aloo Parathas (stuffed potato flatbreads): Ingredients: For the Dough: 2 cups whole wheat flour (atta) Water (as needed) A pinch of salt 1 tablespoon oil (optional) For the Filling: 2 large potatoes (boiled and mashed) 1 teaspoon cumin seeds 1-2 green chilies (finely chopped, adjust to taste) 1 teaspoon grated ginger (optional) 2 tablespoons fresh coriander leaves (chopped) Salt to taste 1 teaspoon garam masala (optional) 1 teaspoon red chili powder (optional) Instructions: Step 1: Prepare the Dough 1. In a mixing bowl, combine the whole wheat flour and a pinch of salt. 2. Gradually add water and knead it into a soft dough. You can add oil for extra softness if desired. 3. Cover the dough with a damp cloth and let it rest for about 20-30 minutes. Step 2: Prepare the Filling 1. In another bowl, add the mashed potatoes along with cumin seeds, chopped green chilies, grated ginger, chopped coriander leaves, salt, garam masala, and red chili powder. 2. Mix everything well until the spices are evenly incorporated with the mashed potatoes. Taste and adjust seasonings if necessary. Step 3: Roll and Cook the Parathas 1. Divide the dough into small equal portions (about the size of a tennis ball). 2. Take one portion of dough, flatten it slightly, and roll it out into a small circle (about 4-5 inches in diameter). 3. Place a portion of the potato filling in the center and bring the edges of the dough together to seal it. 4. Gently flatten the stuffed dough ball and roll it out again to form a circle (about 7-8 inches in diameter). Use flour to dust if necessary to prevent sticking. 5. Heat a tawa or skillet over medium heat. Place the rolled paratha on the hot tawa. 6. Cook for about 1-2 minutes until you see bubbles on the surface.
