Welcome to my kitchen! Today, I’m sharing a dish that’s very close to my heart, Jamaican oxtail, seasoned, marinated, and cooked low and slow until it’s fall-off-the-bone tender. After my recent trip to Jamaica , it’s only right I show some love to the island by cooking one of my all-time favourite Jamaican dishes: oxtail served with rice and peas and perfectly fried plantain. Ingredients – Jamaican Oxtail Recipe Oxtail & Seasoning 3 lbs oxtail, trimmed and washed (with lemon, salt, and water) 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp all-purpose seasoning 1 tbsp oxtail seasoning 1 tsp ground allspice 1 tsp black pepper 1 tsp salt (adjust to taste) 2–3 sprigs fresh thyme (or 1 tsp dried thyme) Fresh Veggies & Aromatics 3 green onions (scallions), chopped 1 small red onion, chopped 1 small white onion, chopped 3 garlic cloves, minced 1 medium carrot, chopped 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 1 tomato, diced Wet Marinade 2 tbsp green seasoning 3 tbsp oxtail marinade 1 tbsp Worcestershire sauce 1 tbsp olive oil Cooking Base 1–2 tbsp olive oil (for browning) 1 tbsp sugar (brown preferred, but white works too) 2–5cups boiling water (for simmering, added gradually) 1/2- 1 cup beef broth (for extra richness) 1 tbsp ketchup (optional but adds a nice sweet tangy.
