Method 1. Combine the egg whites and granulated sugar in a clean, heatproof bowl. 2. Place the bowl over a saucepan of gently simmering water (double boiler method). Stir continuously until the sugar has completely dissolved and the mixture reaches 150–160°F (65–71°C). 3. Remove the bowl from the heat. Before placing it on your stand mixer, make sure to thoroughly dry the bottom of the bowl so that no water drips into the meringue. 4. Begin whipping the mixture on low speed, then gradually increase the speed as the meringue becomes lighter. Continue whipping until you achieve a stiff, glossy meringue. 5. Before adding the butter, check that the mixing bowl feels completely cool to the touch. This step is essential for a smooth buttercream. 6. Add the softened butter one piece at a time. Wait until each piece is fully incorporated before adding the next. Be patient—this stage may look curdled or soupy for a while, but keep mixing and it will come together beautifully. 7. Once all the butter has been incorporated, replace the whisk attachment with the paddle attachment. Add the vanilla extract and mix on low speed for several minutes. This helps remove excess air bubbles and creates an ultra-smooth, silky buttercream that’s perfect for frosting and decorating cakes.
