Dhaba style anda curry My this Masala Egg curry recipe will surely remind you of the rustic egg curries you get in dhabas. Deep in color, spicy Onion tomato gravy with oil oozing on the sides and that smokey flavour. It is such a wholesome meal and is perfect for winter days. Let’s see the recipe. Ingredients (to roast eggs) 4 boiled eggs 1 tsp oil 1/2 tsp red chilli powder 1/2 tsp turmeric powder 1/2 tsp salt (For the gravy) 3-4 tsp mustard oil 1 bay leaf 1 cinnamon 2-3 green cardamom 1 black cardamom 3-4 onions, chopped 1 tsp ginger, chopped 1 tsp garlic, chopped 2 green chillies, chopped Handful of coriander stems 1 tsp red chilli powder 1 tsp Kashmiri red chilli powder 1 tsp coriander powder 1/2 tsp turmeric powder 1 tsp cumin powder 2 tomatoes, chopped Salt to taste Hot water as required 1/2 inch ginger juliennes Handful of coriander leaves 1 tsp garam masala 1 tsp Kasturi methi Method 1. In a pan, add oil, boiled eggs, red chilli powder, turmeric powder and salt. Toss everything well for 2 mins and keep aside. 2. In another bigger pan, add oil, whole spices, onion, ginger, garlic, green chillies, coriander stems and saute until onions get brown. 3. Add all the powdered spices and hot water and cook them for 2-3 mins. 4. Now add tomatoes and salt and cook until tomatoes get soft and mushy. 5. Now add some more water, cover and cook for good 10 mins on low heat. 6. Once you see the oil oozing out, add fried eggs, garam masala, Kasturi methi, coriander leaves, and ginger juliennes. 7. Give everything a good mix and add more some coriander leaves for the final touches. 8.
