This is a super easy recipe that is perfect for the holidays and a nice side dish to go with your favorite meat and veggies. This is one of my favorite “haole” foods to eat and I especially love eating mashed potatoes with American southern food or BBQ meats. I love to add lots of garlic and butter to give it that creamy taste. I hope you’re all doing great and keeping safe! Please keep Maui and Hawaii island in your thoughts and prayers as the fire victims still need the love and support. Ingredients: 6-8 medium potatoes of your choice. Russet or red potatoes work the best 1/2 C Whole Milk 4 tbsp melted butter 3 garlic cloves diced Potato peeler and masher Seasonings: 1/4 tsp each of salt, black pepper, garlic powder, and paprika 1/2 tsp parsley flakes Fill a large pot of water and put on stovetop on medium heat. Rinse potatoes and peel the skin (it’s okay to leave some skin on). Slice potatoes into bite size pieces. Put sliced potatoes in pot of water and let this boil lightly. Poke potatoes with a stick or fork to check for softness. Drain out the water and start mashing your potatoes to your desired consistency. Boil potatoes for 30 to 45 mins or until potatoes get soft. Melt your butter and diced garlic together over the stovetop or microwave. Add the milk, butter, garlic, and seasonings to drained potatoes while mashing. Mix everything well with a large spoon. Serve mashed potatoes as a side dish or eat by itself.
