In this video, I’m showing you how to prepare the perfect Nigerian Jollof rice, starting with your CONFAM pepper mix — the real secret to getting that smoky, party-style Jollof rice we all love. Pepper Mix (CONFAM ratio) • 40% Red bell peppers (Tatashe) → 25 pcs • 20% Tomatoes → 14 pcs (very large ones) • 10% Shombo (Red chili) → 10 pcs • 10% Scotch bonnet (Rodo) → 14 pcs • Onions → 4 big bulbs (no fixed ratio, but onions make Jollof sweet — don’t overdo it, balance is key) • Ginger & Garlic → to taste I’ve already done the maths for you, so all you need to do is follow this exact ratio and you’ll get that banging Jollof flavor. Now here’s something you need to note: my tomatoes were very large, so using 14 worked perfectly. If you’re using smaller tomatoes, you’ll want to either reduce your peppers or increase your tomato count, otherwise your mix will be too hot or not balanced. That’s the beauty of this recipe, it’s flexible once you understand the ratio. For the rice itself, I cooked 7½ cups. Why the half? For burning sake because real Nigerian Jollof must smoke! For every 3 cups of rice, I use about 1 sachet of tomato paste. Since this pepper mix is already rich, you don’t need too much paste. In this recipe, I used 2½ sachets, though 3 would still be okay if you prefer that extra color and richness. This video is long and detailed because I wanted to show you the entire process, from blending the pepper mix to steaming the rice low and slow, until it becomes smoky Nigerian Jollof at its best.
