Yeast 1 1/2 C Vital Wheat Gluten 1/3 C Lupin Flour 1/3 C Coconut Flour 1 C Oat Fiber 1/4 C Golden Flaxseed (ground) 3 Tbsp. Granular Sweetener (Erythritol, Bocha Sweet, Allulose or what you prefer.) 1 1/2 tsp. Salt 1/2 tsp. Xanthan Gum 3 Tbsp. Softened Butter 1 lg egg (Or 1 egg yolk + 2 Tablespoons more water. See video.) Begin by heating water and honey to between 110-120- degrees F. and mix in yeast, then set aside. I add all dry ingredients except yeast into bread machine (Or mixing bowl) and mix a bit before adding wet ingredients. I then add the yeast / water mix, then butter and egg, while mixing. Mix thoroughly but only knead a little as buns should be soft, and kneading toughens bread dough so the finished product can be sliced and used for sandwiches and such. (This is the biggest trick to getting them soft. In my bread machine, I use the 2 lb dough setting and once initial mixing is done, I roll em.) Roll like I did in my video and place close enough they can grow together a little Place in warm oven with pan of hot water in the bottom for them to rise. Once risen 2/3 the desired size, pull out and turn oven to 350 degrees and begin preheating. Once oven is at 250 (That is not a typo), place buns in oven and bake for about 28 -30 minutes.
