Spread 50g of grated mozzarella evenly in a thin layer, about the size of a slice of toast, in the center of the cold pan. Place the pan on the stove and heat over medium heat. Add a small knob of butter to the center of the cheese and crack an egg on top. Briefly cook the egg, then place a slice of toast on top. Add another small knob of butter to the toast. Cook the cheese from the bottom until golden brown. Remove the pan from the heat and carefully loosen the edges of the cheese with a spatula, pushing it against the toast. Once the cheese is firm, carefully loosen the sandwich from all sides and underneath the toast, then turn it over. Fry the sandwich on the other side until the toast is golden brown and the egg is perfectly poached. Meanwhile, chop the parsley. Remove the sandwich from the pan, arrange it on a plate, and season with hot seasoning. Sprinkle some chopped parsley over the sandwich and serve immediately.
