खट्टे मीठे स्वाद वाले करेले की सब्जी अब अलग स्वाद वाली sweet and sour bitter gourd/khatta mitha karela. #shalinijain #bittergourd #karela #recipe #food #cooking #indianfood #sabji #mithakarela ingredients- 7 bitter gourd/karela. 2 spoon salt, ½ spoon turmeric powder. for sabzi- 30 ml mustard oil/peanut oil, ¾ spoon cumin seeds, 12 nos cashews/kaju, 15 nos raisins/kishmish, ¼ cup desiccated coconut, red chilli powder as your taste, 2 tbsp coriander powder, 1 tbsp fennel seeds, ¾ tbsp turmeric powder, Salt to taste, 3 tbsp water, 1 spoon dry mango powder, 4 to 5 tbsp jaggery and dates saunth/chutney, chopped fresh coriander leaves. Method- Peel all the bitter gourds and cut them into small pieces, add salt and turmeric, and keep aside for half an hour. Now wash it two-three times with clean water and squeeze it well. Fry the bitter gourd pieces in mustard oil on medium flame till they turn pink. Now add the bitter gourd peels and all the spices,water, and cover and cook on low flame for 10 to 15 minutes. Now add dried mango powder, sweet-sour jaggery, and date chutney and cover it again and cook for 5 minutes. Switch off the flame and finally add chopped coriander leaves. Eat this delicious sweet and sour bitter gourd vegetable with roti. NOTE- You can keep this vegetable in the fridge and eat it for 5 to 6 days.
