One Bowl Banana Bread – No Mixer Needed!

Banana Bread Recipe Ingredients • 250g ripe bananas (about 2½ medium bananas), mashed • 50g brown sugar • 50g white sugar • 2 eggs (room temperature) • 90g melted butter • 10g baking powder • 220g all-purpose flour • 1 tsp vanilla extract • 70–100g chocolate chips (plus extra for topping) ⸻ Instructions 1. Preheat the oven to 160°C (no fan) (320°F). Grease or line a loaf pan with parchment paper. 2. Mash the bananas in a large mixing bowl until smooth. 3. Add the sugars (brown and white) to the mashed bananas and mix well. 4. Beat in the eggs one at a time, making sure each is fully incorporated. 5. Pour in the melted butter and vanilla extract, and stir until combined. 6. Sift in the all-purpose flour and baking powder. 7. Gradually fold the dry ingredients into the wet banana mixture. Mix gently until just combined — do not overmix. 8. Fold in the chocolate chips (reserve some for sprinkling on top if you like). 9. Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle the remaining chocolate chips on top. 10. Bake in the preheated oven for about 1 hour and 10 minutes, or until a skewer inserted in the center comes out clean. 11. Remove from the oven and let the banana bread cool in the pan for 10-15 minutes. 12. Transfer to a wire rack to cool completely before slicing.
