Homemade Chicken Biryani For CHICKEN Marination : 1 kg Chicken 1.5 cup yogurt 2 tbs ginger garlic paste 2 tbs of crushed green chillies 1 tbs crushed coriander seeds Half tsp nutmeg mace powder 1.5 tsp red chilli powder Half tsp turmeric powder Half tsp crushed red chillies 2 tsp of coriander powder 1.5 tsp salt Half tsp chaat masala Half tsp chicken powder 2 bay leaves 2 cinnamon sticks 4 black cardamom 7 cloves 4 star anise 8 black pepper 4 green cardamom 1 tsp cumin 3 tomatoes (round sliced) 5 to 7 Dry plum 2 tbs chopped coriander 2 tbs chopped mint 200 gm oil (Mix all the ingredients and marinate the chicken for an hour) 3 or 4 onions (Finely sliced and fried) 2 potatoes Boil with a pinch of black pepper, half tsp salt and a pinch of food color. Cook the marinated chicken for 25 minutes and add half of the fried onions. Cook well and add boiled potatoes.. Cover the lid and cook until oil get separated. Boil water for rice. Add 2 tbs of chopped coriander and mint, chillies, add bay leaves, cardamom, black pepper, cloves, cumin, cinnamon stick and star anise Add 1tbs vinegar, 3tbs oil and 2 tsp salt Bring it to boil then add rice. When rice are done ,rinse the water. LAYERING: Add food color on chicken, chopped coriander, mint and chillies Add all the boiled rice Add remaining fried onion, chopped coriander, mint, tomatoes, lemon, green chillies and star anise powder. Cover the lid and cook for 15 minutes.
