Zarda Rice Recipe | شادیوں والا دیگی زردہ | पीला चावल | Sweet Chawal

A very simple and quick Zarda recipe. All tried and tested. ZARDA Recipe in English: Ingredients: -Water 8-10 cups -Salt ½ tsp -Water ¼ cup -Zarda food color 2tsp -Rice (sella) 1 & ½ cup (soaked for 4 hours) -Ghee ½ cup (Preferably desi ghee) -Green cardamom 3-4 -Cloves 3-4 -Sugar ¾ cup or to taste -Kewra essence 1tsp For decoration: -Ashrafiyan -Dry fruits/nuts -Pheeka khoya Direction: -In a pot,add water, bring it to boil. -Add salt. Dissolve zarda food color in water ,add it to pot and mix well. -Add rice and bring it to boil,cook until rice are done. -Strain rice and set aside. -In a separate pot,add ghee,green cardamom and cloves,saute for a minute. -Add boil rice, sugar.Cover and cook until sugar completely dissolves (approx.10-15 minutes) on medium low flame. -Place griddle on stove and put back pot over griddle. -Put it on simmer for 10 minutes. -Add kewra essence,ashrafiyan,pheeka khoya,dry fruits/nuts. -Cover and steam cook for 10 minutes. -Zarda is ready, add gulab jamun and chum chum for garnishing. Recipe in Urdu: Ajza: -Pani 8-10 cups -Namak ½ tsp -Pani ¼ cup -Zarda ka rang 2tsp -Chawal (sella) 1 & ½ cup (soaked for 4 hours) -Ghee ½ cup -Hari elaichi 3-4 -Laung 3-4 -Cheeni ¾ cup ya hasb e zaiqa -Kewra essence 1tsp For decoration: -Ashrafiyan -Dry fruits/nuts -Pheeka khoya Directions: -Patili mein pani dal ker dhak k ubal lein. -Namak dal dei. Pani mein zarda ka rang mix ker k pot mein dal dein aur ache tarhan mix ker lein. -Chawal shamil karein aur chawal ubal lein. -Chawal chaan lein aur side per rakh dein. -Alag patili mein ghee garam karein,hari elaichi aur laung dal ker ek miute kliya saute karein. -Ab is mein boil chawal,cheeni dal dein. Dhak ker halki ancch per cheeni ghul janay tak paka lein (approx.10-15 minutes) -Chulhay per tawa rakh ker us k upper patili rakh dein. -Dum per 10 minutes kliya rakh dein. -Kerwa essence,ashrafiyan,pheeka khoya,dry fruits/nuts shamil karein. -Dhak ker dum per 10 minutes kliya rakh dein. -Zarda tayyar hai, gulab jamun aur cham cham sa garnish karein.
