The unusual combination of cherry tomatoes and spinach, with a dash of red chilli flakes and an extra dose of garlic makes this a flavour-packed and visually-appealing pasta treat. Loads of cheese and a sprinkling of herbs add to the charm of the Pasta with Chilli Tomatoes and Spinach, as does an exciting garnish of chopped walnuts. Pasta with Chilli Tomatoes and Spinach Preparation Time: 15 minutes Cooking Time: 12 minutes Makes 3 servings Ingredients 1 cup cooked penne 1 tsp dry red chilli flakes (paprika) ¼ cup cherry tomato halves ½ cup blanched and chopped spinach (palak) 2 tsp olive oil 2 tbsp roughly chopped garlic (lehsun) ½ cup sliced onions 2 tbsp tomato puree 1 tsp dried mixed herbs ¼ cup milk ¼ cup grated processed cheese Salt to taste For The Garnish 1 tbsp roughly chopped walnuts (akhrot) 1. Heat the olive oil in a broad non-stick pan, add the garlic, onions, chilli flakes, tomato purée, and mixed herbs, mix well and cook on a medium flame for 10 minutes, while stirring occasionally. 2. Add the spinach and cherry tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. 3. Add the pasta, milk, cheese and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. 4. Serve hot garnished with walnuts.
