Day 3 of the 3-Day Medical Medium Wild Blueberry Challenge My takeaway from this challenge is that wild blueberries are a superfood that can be easily incorporated into my daily diet. If there’s one thing that I can invest wisely in my lifetime, it is to invest in my health. I will continue to consume wild blueberries for their health benefits and their deliciousness! Out of all the recipes that I have tried from this challenge, I really enjoyed making the Wild Blueberry Latte & the Potato Waffle with Wild Blueberry Sauce the most. I can see myself making the Wild Blueberry Latte for friends and family to enjoy when they come for a visit. The potato waffle is a lovely treat for Sundays (or any day really, the blueberry sauce on its own is excellent over fruits as a decadent dessert) Potato Waffle with Wild Blueberry Sauce (2 servings) 2 1bs potatoes chopped Steam the potatoes for 15-20 mins until soft mash up the potatoes and place them in a non stick ceramic waffle maker for 10-15 mins (waffles should be crispy) Wild Blueberry Sauce: 2 Cups frozen wild blueberries 1/4 Cup maple syrup 1 tspn alcohol free vanilla 2 tspn arrowroot powder combine the frozen wild blueberries into a pot, bring to a light boil and simmer for 6-8 mins until softened add the vanilla & arrowroot powder and cook for another 2 mins drizzle the blueberry sauce over top the waffles enjoy! 🫐 Honey, Orange Wild bBlueberry Refresher 1 Cup wild blueberry juice (I used 1 Cup frozen wild blueberries) 1 Cup freshly squeezed orange juice (I used 4 oranges blended) 2-3 TBS raw honey 1/3 Cup ice (optional) blend all together enjoy!
