This Southern Collard Greens recipe delivers perfectly tender, flavor-packed greens using the Instant Pot—no long simmering or stove babysitting required. Made with classic Southern seasonings and cooked under pressure, these collard greens have the rich, slow-simmered taste you love in a fraction of the time. The Instant Pot locks in flavor while creating tender greens and delicious pot liquor every time. Perfect for Sunday dinner, holiday meals, or anytime you’re craving authentic Southern comfort food with an easy, hands-off cooking method. Serve with cornbread, fried chicken, or your favorite soul food sides. 1-2 large bunches of Collard Greens ½ onion 32-oz chicken broth 8-16 oz water smoked meat (ham hocks, turkey, ham, salt pork or bacon) Directions – Instant Pot Southern Collard Greens Clean the Greens by rinsing the collard greens thoroughly under cold water to remove grit. Remove the thick center stems, stack the leaves, roll them tightly, and slice into ribbons. Rinse again and drain well. If you are unsure the grit has been removed, wash again. You do not want gritty greens! Add collard greens, broth, water, salt, onion, and meat of choice to Instant Pot packing down tightly. Do not stir. Pressure Cook - Secure lid and set valve to Sealing. Cook on High Pressure for 2-hours. When cook time has ended, allow a 15-20 minute natural release, then carefully quick release remaining pressure before opening the lid. Remove meat, shred, and return it to the pot, stir, taste, and serve. Add additional salt if needed. Directions – Southern Collard Greens (Stovetop) Clean the Greens - Rinse collard greens thoroughly to remove grit. Remove the thick center stems, stack the leaves, roll them tightly, and slice into ribbons. Rinse again and drain well. Sauté the Aromatics - In a large pot or Dutch oven, heat a small amount of oil over medium heat. If using bacon, saute bacon to render fat. Remove bacon pieces from the pan, drain on paper towels and set aside. Add chopped onion and cook until softened in bacon fat, about 3–4 minutes. (If not using bacon as seasoning meat, simply saute onion in a small amount of oil until tender.) Add Meat - smoked turkey, ham hock, or bacon to the pot. Add greens & liquid to the pot. Pour in chicken broth, then season with salt, pepper and sugar (@ 1 teaspoon - optional). Cook - Bring to a boil and then reduce to a gentle simmer. Cover and cook over low heat for 1 ½ - 2 hours, stirring occasionally, until the greens are tender. The longer the greens cook at a low temperature, the more tender they will become. Finish & Adjust - remove the meat, shred it, and return it to the pot. Taste and adjust seasoning as needed. Serve hot with cornbread and hot sauce, spooning some of the pot liquor over the greens.
