Masala Rice Recipe - Ingredients: Vegetables: Brinjals/ Aubergine - 125 gms Ivy gourd/ Tendli - 100gms Potatoes -200 gms Cauliflower -100 gms Carrots -250 gms Green peas - 200gms ( frozen or fresh) For Roasted masala pd: Dessicated coconut -1/4 Cup or 3 Tblsps Peppercorns -10 Coriander seeds -1 Tblsp Cumin seeds/Jeera - 1 tsp Cinnamon - 1 inch Cloves - 3 Cardamoms - 2 For Green Masala: Coriander leaves - 1 handful Ginger -15 gms Garlic -8 cloves Spicy Green Chillies - 7 Cooking: Rice : 2 Cups Hot water - 4 Cups ( with the same cup in which we measured the rice) Oil - 4-5 Tblsps Mustard seeds - 1 tsp Cumin seeds -1/2 tsp Cashew nuts - 1 handful Curry leaves - 3 Sprigs Bay leaves -2 Asafoetida pd /Hing pd -1/2 tsp Curd/ yogurt - 3 Tblsps Turmeric pd-1/4 tsp Salt - 4 tsps Ghee -2 Tblsps or more.
