Raspberry Almond Cake Mix Cookies Cake Mix Cookie Ingredients: • 1 box almond cake mix • 2/3 c flour • 1 tsp baking powder • 1/3 c melted butter • 2 tbsp milk • ½ tsp vanilla • ½ tsp almond extract • 2 eggs Filling Ingredient: • Raspberry jam or preserve Icing Ingredients: • 1 c powdered sugar • 1 tbsp cream cheese, softened • 1 tbsp milk • ½ tsp clear vanilla flavor Instructions: • To make cookies: combine all ingredients until smooth. Make 12- ½ tbsp dough balls and 12- 1 ½ tbsp dough balls, set aside. Flatten the 12 smaller ½ tbsp dough balls. Spread ½ - 1 tsp raspberry jam on top of each. Flatten each of the larger dough balls and cover the raspberry jam. Pick one of the cookies up, careful to keep the top and bottom intact. The larger piece of dough will be hanging over the smaller one, fold the dough from the larger piece under the smaller piece. This will make one cookie. Place the cookie on a baking sheet so the seam side is down and the smooth side is facing up. Repeat for all 12 cookies. Once the process is repeated for all cookies, place them in the fridge for 30 minutes. • Remove cookies from fridge, place on baking sheet 2 inches apart. Bake at 350 for 10 – 12 minutes. Once cooled, top with icing. • To make icing: combine powdered sugar, cream cheese, milk, and vanilla flavor until smooth. Notes: 1. this recipe makes 12 two tablespoon dough balls/cookies 2. vanilla/white cake mix with 1-2 tsp almond extract can be used if almond cake mix cannot be found
