EASY WHOLE30 SOUTHWEST CHICKEN | CROCKPOT | PALEO | GLUTEN FREE | DAIRY FREE

Ingredient list: 1.5 lbs chicken thighs (bone in is preferred, if you use boneless switch crockpot setting to Low for 6 hours) 1 tbsp chili powder 2 tsp paprika 1 tsp coriander 1 tsp garlic powder 1 tsp onion powder 1 tsp sea salt 1/2 tsp cayenne 1/2 tsp red pepper flakes 1 Bell Pepper (I like red) 1 bunch of Green Onions 1/4 cup lime juice* 1 cup water (or chicken broth) Frozen or fresh zucchini spirals Frozen or fresh riced cauliflower Sauce mixture: 1 tbsp arrowroot starch 1 tbsp water 1/2 cup coconut cream (or the solid portion from a can of coconut milk) Add Chicken Thighs to Crock pot and set to high. Mix seasonings together and rub into thighs. Cut Bell pepper and Green onions and add to crock pot. Pour in lime juice and water/chicken broth. Let cook for 4-5 hours on high (or 6-8 hours on low) When you have an hour left mix together arrowroot starch and water and stir into the crockpot. Add in coconut cream. Replace lid and let cook another hour. When finished cooking prepare your base of zucchini spirals and riced cauliflower (sub in pasta or rice if you’re not on whole30) *note: I realized later that the lime juice I used has sulfates which is not Whole30 approved!
