2 tablespoons oil or butter 1 large onion, finely chopped 3-4 cloves garlic, minced 1-inch piece of ginger, minced 300–400g mushrooms (button, cremini, or mixed), sliced 1 green chili, chopped (optional) 1 teaspoon cumin seeds 1 teaspoon coriander powder 1 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon paprika or Kashmiri red chili powder (for color, optional) 1 large tomato, finely chopped (or ½ cup pureed tomato) ½ cup coconut milk or heavy cream ¼ cup water or as needed Salt to taste Fresh cilantro, chopped (for garnish) Instructions: Prepare the base: Heat oil or butter in a pan. Add cumin seeds and let them splutter. Then add onions and sauté until golden. Flavor the curry: Add ginger, garlic, and green chili. Cook for 1-2 minutes until fragrant. Cook mushrooms: Add sliced mushrooms. Stir-fry on medium heat until they release water and start to brown slightly. Spice it up: Add turmeric, coriander powder, paprika, and salt. Mix well. Add tomatoes: Stir in the chopped or pureed tomatoes. Cook until the oil starts to separate from the masala (around 5–7 minutes). Make it creamy: Add coconut milk (or cream) and a splash of water if needed for desired consistency. Simmer for 5 minutes. Finish: Sprinkle garam masala, stir, and turn off the heat. Garnish and serve: Garnish with chopped cilantro.
