Written Recipe: SHINWARI MUTTON KARAHI Ingredients: • Cooking Oil 1 tablespoon • Lamb Tail Fat ¼ kg • Lamb Meat / Mutton 1 kg • Salt 1 teaspoon • Tomatoes 4 large size • Black Pepper (freshly ground) 2 teaspoons • Green Chillies ¼ cup Preparation: 1. 1. In a large pan, add cooking oil and heat it. 2. Fry lamb tail fat in heated oil on medium flame. 3. Add lamb meat / mutton and salt. 4. Fry for 5 minutes. 5. Cover the pan for 20 minutes. 6. Add tomatoes and cook them covered for 15 – 20 minutes until tomatoes are tender. 7. Remove their skin. 8. Crush the tomatoes and mix well until tomatoes are dissolved. 9. Cover for 20 more minutes until gravy is thick and meat gets tender. 10. Sprinkle with freshly ground black pepper and green chillies and cook for 3 – 5 minutes on high flame. Serve with naan, salad and mint sauce (raita). And Enjoy!
