Imli Tamatar ki Chutney and Tamatar Pyaz ki Chutney Recipe in English: Imli Tamatar ki Chutney Ingredients: -Tamatar (Tomatoes) cubed 4 large -Gur (Jaggery) ½ Cup -Imli pulp (Tamarind pulp) ½ Cup -Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs -Namak (Salt) ½ tsp or to taste -Lal mirch powder (red chilli powder) 1 tsp or to taste -Kala namak (Black salt) ½ tsp -Zeera powder (Cumin powder) ½ tsp -Kala namak (Black salt) ½ tsp -Sonth (Dried ginger powder) ½ tsp -Pani (Water) 1/4 Cup or as required Directions: -In a pot add tomatoes, jaggery, tamarind pulp, Kashmiri red chilli powder, salt, red chilli powder, black salt, cumin powder, dried ginger powder and water. Mix well and bring it to boil. Cover and cook on low flame for 12-15 minutes. -Let it cool down. -In a blender jar add cooked tomato mixture and blend well. Serve ! -Can be stored in refrigerator for up to 1 week. Tamatar & Pyaz ki Chutney Ingredients: -Cooking oil 2-3 tbs -Pyaz (Onion) sliced 1 large -Lehsan (Garlic) cloves ½ Cup -Hari mirch (Green chillies) 8-10 -Sabut lal mirch (Button red chillies) 3-4 -Tamatar (Tomatoes) cubed 4 large -Namak (Salt) ½ tsp or to taste -Zeera powder (Cumin powder) 1 tsp -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Pani (Water) 2-3 tbs or as required -Boiled water 1/4 Cup or as required Tadka: -Cooking oil 3-4 tbs -Lehsan (Garlic) sliced 2 cloves -Zeera (Cumin seeds) 1/4 tsp -Kary pata (Curry leaves) 10-12 Directions: -In a wok add cooking oil, onion and fry until translucent then take out in a bowl. -In a wok add garlic, green chillies, button red chilies and fry for 1 minute then take out in a bowl. -In a wok add tomatoes and cook for 1-2 minutes. -Add salt cumin powder, red chilli powder and mix well. -Add water mix well and cook for 2-3 minutes. -Let it cool down. -In a blender jar add onion & garlic mixture, cooked tomato mixture, boiled water and blend well. Prepare Tadka: -In a frying pan add cooking oil, garlic and fry until light golden. -Add cumin seeds, curry leaves and mix well. -Pour tadka in blended tomato chutney and mix well.
