This video shows how to make your Ubuntu boot to command line in 14.04 variants including the Server edition, instead of GDM, the graphical login screen. This should also work in 13.04 and 13.10 and all desktop environments. Why would you want to boot to commandline instead of a GDM? Well a server is something that you do not login often and work on. So one normally does not need a GUI. A command line environment is more secure than a GUI desktop environment and consumes less resources too. But if you ever need a GUI Gnome desktop environment you still have access to it. To make Ubuntu boot to GUI, just login and type "startx" and it should take you to your desktop environment.
